Easy Roasted Chickpea Recipe
I have yet to find someone who doesn’t have a special place in their heart for chickpeas & hummus. These funny looking legumes are packed with fiber, protein, AND iron. Recently I have been enjoying preparing them as a stand alone snack. Grab a baking sheet, a handful of spices, and enjoy this simple recipe for a healthy, flavorful snack.
Ingredients
2, 15.5oz cans organic garbanzo beans (Trader Joes)
4 tbs olive oil
2 tsp cumin
2 tsp curry powder
1 tsp cayenne pepper
1 tsp smoked paprika
1 tsp salt
Baking Instructions
Preheat your oven to 400F.
Rinse and drain the chickpeas. Drain both cans of chickpeas into a strainer and give a good rise with water over the sink.
Dry the chickpeas. You can use a paper towel or clean kitchen towel. Be gentle. Remove any loose skins.
Drizzle olive oil over your baking sheet and add chickpeas. 4tbs is a fair amount of olive oil. You can use a little less but might sacrifice the crispiness of your finished snack. Mixed olive oil and chickpeas thoroughly until evenly coated.
Roast chickpeas for 25-30min. Towards the 25min mark, I check in to make sure they aren’t burning. Every 10 min give the pan a little shake. Look for a golden brown color and slightly crispy exterior.
Add your spices. Remove the chickpeas from the oven and sprinkle your spices evenly over the entire pan. Use your wooden spoon to mix them evenly again. These are best served fresh from the oven. Enjoy!
